This recipe was my entry in a recent Iron Chef style pot luck dinner. It is also a regular weeknight side dish around these parts.
- 2 Large Sweet Potatoes
- 3 Tbsp Butter
- 1 Tbsp Adobo sauce (optional)
Peel and dice sweet potatoes. A smaller dice will cook faster, I like about 1/4 inch. Melt butter in sauce pan over medium heat. Add sweet potatoes and reduce heat to a very low simmer. Simmer for ~45 minutes, stirring occasionally. Once potatoes are cooked and soft, mash thoroughtly. Season to taste with salt. A little cinnamon or ground nutmeg is also nice.
To kick things up a notch add about 1 Tbsp of sauce from a can of adobo chilies
